EASY CAROB CAKE For those of you who love chocolate, but can't have it any more because you get migraines from it, carob can be a fun substitute. It does not really taste like chocolate, but it looks like it, and has a wonderful flavor that can serve as a substitute in some of your favorite chocolate recipes. It can be purchased at most health food stores.
Ingredients:
1 ½ cups flour 3 tablespoons carob powder 1 teaspoon baking soda 1 cup sugar 5 tablespoons oil ½ tablespoon white vinegar ½ teaspoon salt 1 teaspoon vanilla 1 cup cold water
Sift dry ingredients into greased 9x9x2 pan. Make 3 holes in the dry mixture. Pour the oil into one, the vinegar into one, and the vanilla into one. Pout cold water over all of it. Thoroughly mix with a spoon. Bake at 350° for 30 minutes. It is done when a toothpick inserted in the middle comes out clean. Cool in pan. Frost with your preferred frosting, while in pan. Serve in squares. Can also be served with ice cream or frozen yogurt instead of frosting.
