Sharing Smiles

All of us have times when we need to be encouraged to take one day at a time and be thankful for the blessings we do have in our lives. This page is designed to share some of the thoughts that keep others smiling as they successfully make it through another day. This is a page for our patients and their families to share with each other the things they have learned to help them accommodate for some of their personal challenges.

If you have some quotes, recipes, or tips for daily living you would like to share, please submit them to quotes@neurocarecenter.com Let us know if you would like your name listed as the submitter. Or if you prefer, you can drop them off at the office at your next visit.

EASY CAROB CAKE
For those of you who love chocolate, but can't have it any more because you get migraines from it, carob can be a fun substitute. It does not really taste like chocolate, but it looks like it, and has a wonderful flavor that can serve as a substitute in some of your favorite chocolate recipes. It can be purchased at most health food stores.

Ingredients:

1 ½ cups flour
3 tablespoons carob powder
1 teaspoon baking soda
1 cup sugar
5 tablespoons oil
½ tablespoon white vinegar
½ teaspoon salt
1 teaspoon vanilla
1 cup cold water

Sift dry ingredients into greased 9x9x2 pan. Make 3 holes in the dry mixture. Pour the oil into one, the vinegar into one, and the vanilla into one. Pout cold water over all of it. Thoroughly mix with a spoon.

Bake at 350° for 30 minutes. It is done when a toothpick inserted in the middle comes out clean. Cool in pan. Frost with your preferred frosting, while in pan. Serve in squares. Can also be served with ice cream or frozen yogurt instead of frosting.
